#3 - Nachos Deluxe
Description: A large platter comes with 12 delicious nachos filled with beans, taco meat or queso. The center is filled with guacamole, sour cream and jalapeños. A smaller platter comes with 8 nachos.
My good friend Timoteo recommends that you count the nachos when they arrive at your table. Thank-goodness he now lives in California because he could count very well! |

#4 - Nachos con Fajitas (pronounced "fa-he-tah")
Description: Beef or chicken with guacamole, cheese and jalapeños. Half order is 8. Full order is 12.
In Spanish, fajita is a form (the diminutive) of the word faja which translates to "belt" or "girdle" in English. Butchers along Northern Mexico used the word to refer to the diaphragm muscle of a steer.

#28 - Pollo Enchilada Verdes
Description: Three green enchiladas topped with green tomatillo sauce and cheese (rice only).
An enchilada is a traditional Mexican dish. Enchilada comes from the verb enchilar ("to add chile pepper to"). Enchilada literally means "seasoned with chiles". The traditional enchilada sauce is just that—dried red chile peppers soaked and ground into a sauce with other seasonings. However, red enchilada sauce may also be tomato-based with red chiles, while green enchilada sauce is usually made of tomatillos and green chiles. Mole may also be used as enchilada sauce. |
